I didn't get that adventurous today. I made savory cornbread, chorizo, cheddar & scallion waffles. Notch was very interested in this. Very. Interested. If you don't have a waffle iron, you can easily make these into griddle cakes, or bake in a cornbread pan.
I have been trying to improve on my photography (using that term loosely, working with just a cell phone). In attempts to take advantage of natural light, I positioned a stool in the corner near the windows. All Notch was aware of was, "Food is somewhere that it's usually not. Why? Can I eat it? Is this for dogs?"
No. Sorry buddy. I love you dearly. Now GET! He ran upstairs, but his eye was still on the prize!
I modified my go-to cornbread recipe; I reduced the amount of sugar, omitted the salt (chorizo & cheddar have enough salt for our tastes), reduced the amount of egg used, and added more milk to produce a thinner batter. **note** If you are going to bake this in the oven, you'll want the thicker batter, use just 1 cup of milk, as opposed to the 2 cups directed below.
Simply Scratch recently posted a recipe for bacon & cheddar waffles. Those would be great with sweetened with syrup. These? Nope. Full on savory grilled cheese waffles.
I had some leftover chili in the freezer for S to have with his sandwiches. Pickles & olives are good with me. I did share with Notch...just a taste. I know. I know, but he was looking through my soul with THOSE EYES!
The next day....can you say egg and cheese, please? They were even better than the night before as a late breakfast/early lunch, with a cuppa tea.
Savory Waffles (Cornbread, Chorizo, Cheddar & Scallion)
makes 10 waffles
Cornbread adapted from, Better Home & Gardens New Cook Book (circa 1996)
1 cup flour
1cup cornmeal
1 TBS sugar
1 TBS baking powder
1 egg beaten
2 c milk **see note above**
Whisk flour, cornmeal, sugar, and baking powder. Add eggs and milk, stir until combined without over mixing. Set batter aside.
Savory Waffles
Cornbread batter
1 cup chorizo, grated or finely chopped
1/2 cup cheddar cheese, grated
1/4 scallions, finely chopped, greens and white sections
Fold chorizo, cheddar, and scallion into cornbread batter. Heat waffle maker to manufacturer's recommendations, grease if necessary. Pour 1/4-1/3 cups into each section, close the cover and cook for 3-5 minutes until the edges are set. Cool on a wired rack.
Use as bread for grilled cheese, or other grilled sandwiches, or toast and top with chili & cheese.
